As of 8 AM, there is an 8-pound beef brisket and two 8-pound pork butts on the smoker, with a combination of hickory and apple wood providing the smoke. This is gonna be good.
BTW, if anyone in the Chicago area wants some apple wood, have we got a source for you!

They have some crazy amount of apple wood in chunks and chips that they’re trying to get rid of before the whole property is bulldozed by developers later this year. It’s cash-only, $5 for a 3-gallon back of chunks/chips.
Ah, Quig’s. It really sucks that that place got the axe. But, it’s understandable. Well, sort of.
