Here’s the first batch of beer that me_not_you and I made today.
Recipe
3.3 lbs Amber malt extract
3.3 lbs Light malt extract
1 lb Orange Blossom honey
0.5 lbs Crystal malt
1 oz. Centennial hop pellets (bittering)
0.5 oz. Northern Brewer hop pellets (bittering)
1 oz. Freshly grated ginger
3 2.75” cinnamon sticks, broken up
Grated zest from four small oranges
1 oz. Tettenang hop pellets (aroma)
British ale yeast (Wyeast 1098)
Procedure

| 1 | X | Place the bags of malt extract into hot water to make them more manageable. |
| 2 | X | Add 2 gallons of water to the brewing pot. |
| 3 | X | Pour the Crystal malt into a muslin bag and tie the bag closed. |
| 4 | 12:32 | Place the bag into the cold water and allow the grains to steep. Raise the temperature to 130-140 degrees F but no hotter. |
| 5 | X | After 30 minutes from turning on the burner, turn off the burner. |
| 6 | X | Lift the bag from over the water with tongs. Pour 0.5 gallons of hot water through the bag. Discard the grain bag. |
| 7 | X | Add the Amber and Light Malt Extract, and honey to the pot. |
| 8 | X | Stir the pot until everything is completely dissolved. Make sure no syrupy liquids remain on the bottom of the pot. |
| 9 | 13:10 | Restart the burner and bring the pot to a boil. |
| 10 | X | Place the 1 oz. of Centennial and 0.5 oz. of Northern Brewer hops into a muslin bag. |
| 11 | 13:29 | When the pot begins to boil, add the Centennial and Northern Brewer hops to the pot. |
| 12 | X | Monitor the pot for the first 20 minutes to make sure it does not boil over. If it appears ready to boil over, turn down the heat. |
| 13 | X | Place the ginger, cinnamon, and orange zest into a muslin bag. |
| 14 | 14:19 | 50 minutes after the pot started boiling, add the ginger, cinnamon, and orange zest to the pot. |
| 15 | X | Place the Tettenang hop pellets into a muslin bag. |
| 16 | 14:24 | 55 minutes after the pot started boiling, add the Tettenang hops to the pot. |
| 17 | 14:29 | Five minutes later, turn off the burner. |
| 18 | X | Place 2.5 gallons of cold water in a sanitized carboy. |
| 19 | 14:38 | Cool the pot as quickly as possible. |
| 20 | 14:38 | When the temperature of the wort is below 120º F, pour it into the fermenter. |
| 21 | 14:40 | When the fermenter temperature is at 70º F or below, pitch the yeast. |
| 22 | X | Pull a sample from the fermenter and measure and record the Original Gravity: 1.053 |
I would be very interested to see how this turns out, taste wise…
This is actually a re-make (with a few variations in hops) of a beer I made back in 1996. I recall that it was tasty, although the only notes I have is that it was “a beer to get philosophical about!”
A side note: I forgot to add the 0.75 pounds of Light Dried Malt Extract that the original recipe called for. I was worried that this might lead to a lower gravity but it would appear that that is definitely note the case!
