					<description><![CDATA[When cooking for J., I&#039;ve had the same issue with chili and similar concoctions: I like a *lot* more heat than she does, and I&#039;m not always good at measuring the amount of pepper in a sauce. One trick I&#039;ve found really useful: sample frequently, and if a dish is too hot, adding small amounts of sugar will reduce the heat. Just be careful not to add too much--I accidentally created &quot;sweet chili&quot; that way. Bleah. Little amounts, though, won&#039;t negatively affect the flavor, and can even enhance it a little. :)]]></description>
